I don't seem to be getting any "Fireground" communications (i.e. handheld devices with the telltale sound of a stressed voice and canned air flowing in the background. Are these comms off the 800 MHz system somewhere?

You SHOULD be able to hear most of the fireground comms on the response talkgroup. Normally this will be on TG 1648, which is Channel
1A. The usual alternate talkgroup is 1680 Channel 2A.

I don't find it on the Intercept site now but there used to be a "channel map" from about 8 yrs ago that listed what the channels in a SFD radio were. One of the channels was "1B", and I often hear units on the above talkgroups switch to that channel. 1B was listed as STATE OPS 1.
That is a simplex freq on 867.5375 Mhz. You will need to be close to the
incident to be able to hear them on that freq. If I remember right, STATE
OPS 1 is also used by Airlift Northwest for field response landing zone
coordination.
